Filipino Food Pick: Sinigang

The Philippine cuisine is rich in nature showcasing the fusion of sweet, salty, sour and spicy flavors. With the influence of Spanish, Chinese, and American cuisines, the Filipino dishes are known for its diversity in flavor and taste. Most of the dishes are simple in terms of cooking but each has its own identity and goodness in its taste. In today’s Filipino food pick, we highlight one of the country’s favorite dishes known as sinigang. Sinigang is a Filipino stew known for its sour and savory flavor. Its main ingredients include meat (pork, fish, shrimp, etc), tamarind (or guava, calamansi, unripe mango), water, tomatoes, garlic, onions, okra, taro corms, daikon, water spinach (kangkong), yardlong beans (sitaw), and eggplant.  The cooking process consists mainly of cooking the meat in boiling water until it tenderized and then add all the other ingredients and flavorings until they are cooked.

Sinigang is a popular dish served throughout the Philippines. While some of the regions have their own version, its savory flavor and taste remain authentic and distinctive compared to that of other dishes. It is often served in local restaurants, fast food chains, and in small carinderias. The dish is considered healthy as it has various vegetables and spices included in its ingredients. It is definitely a treat for everyone!
