Filipino Food Pick: Adobo


Known for its fusion of salty, sweet, sour, and sometimes spicy flavors, adobo is one of the most popular dishes indigenous to the Philippines. The term ‘adobo’ originated from the Spaniards way back in the 16th century when they invaded and settled in the Philippines. Adobo is a word used by the Spanish people to define a method of cooking, specifically marinating and stewing of ingredients. 

Adobo has different varieties. Two of the most popular ones are pork adobo and chicken adobo (sometimes mixed). Most of the Adobo recipes include simple ingredients such as meat, soy sauce, vinegar, sugar, bay leaves, garlic, and black pepper.  The process of cooking includes marinating of meat in a flavorful sauce, stewing the meat together with all of its ingredients until the meat is tender and the ingredients are cooked. Most of the time, the dish is served with ample amount of sauce but others prefer to eat it with a little bit of sauce which endow them with more flavorful meat.
