Filipino Food Pick: Chicken Inasal

Chicken Inasal is a popular Filipino version of chicken barbeque. It originated from Bacolod, the sugar capital of the Philippines.  Its smoked, aromatic flavor and savory taste make it one of the country’s most eaten chicken dishes.

The dish requires simple and easy cooking preparations to acquire its flavorful and distinctive taste.  The chicken meat is marinated with various spices and flavorings like garlic, pepper, vinegar, soy sauce, calamansi (a local citrus fruit), and lemon grass -- for that extra citrus flavor. The meat is then skewed and grilled to perfection on a hot charcoal grill. But what makes this dish extra special? Its gingery taste that adds up to its flavorful taste and the yellowish color for its added appeal. 

From Bacolod, the Chicken Inasal has find its way throughout the country – offered and served from local houses to small carinderias, to fast food chains and gourmet restaurants. It’s definitely that one Filipino original dish everyone can’t resist!
