Recipes with Mango Tours: Lumpiang Palabok with Roasted Mahi-mahi

Ingredients you'll need:
  • Ready palabok noodles with a little palabok sauce
  • Additional palabok sauce (optional)
  • Garlic
  • Roasted mahi mahi cut in strips (main ingredient)
  • Shrimps
  • Chicharon crumbs
  • Tinapa flakes
  • Onion chives
  • Hardboiled eggs
  • Coriander
  • Spring Onions
  • Mustasa (Mustard Greens)
  • Vietnamese Rice paper (for wrapping)
Step 1.
Soak the Vietnamese paper for les than a minute in water. Automatically it will soften and hydrate.
Step 2.
Take your boiled shrimps, cut into half, lay them neatly side-by-side on the soaked rice paper.
Step 3.
Cover the shrimps in mustasa or mustard leaves before layering it with the pre-made palabok noodles.
Step 4.
Sprinkle a little garlic and tinapa on top of the palabok before laying the roasted mahi-mahi, medium rare, along the edge of the noodles. Add chicharon on top but save some for later.
Step 5. Lay some boiled eggs cut into wedges on top of this mix and add the spring onions after.
Step 6.
Roll the wrap like sushi carefully to avoid tearing the paper or spilling the ingredients. You can wrap another rice paper around it to strenghten the wrap.
Step 7.
Cut the wrap in the middleand begin segmenting into several rolls, using the shrimps as a guide.
Step 8.
Set your rolls on a plate or a container, cover and puor some extra palabok sauce and chicharon crumbs, garlic and chives over it. Stick in a springonion or two for garnish.
For Sauce:
Mix together calamansi, patis(fish sauce), birds-eye chili, and a little sugar to sweeten it. Stir thoroughly before pouring it into a container.
