Tasty Travels: Caldo Verde, Portugal

Soup is always a warm and hearty addition to any meal. From starting your meal to a meal in of itself, it’s a dish that can be served and customized any way you like. Soups can be made with a variety of ingredients from meat to fish, to vegetables all on their own. In Portugal, they make their soup with kale, potatoes, and chorizo to name a few.
The word “Caldo Verde” in Portuguese translates to “green broth” in English, a fitting name given that the majority of this soup’s coloration is very verdant. The only other color that pops from this mix are the dull reddish tones of the sausages mixed in. This mix of fresh vegetables and spicy meat create a tasty flavor that you can happily slurp up.
The ingredients are all usually quite cheap and it only takes a little bit of time to prepare this hearty meal. The type of ingredients can also help change some factors of the soup. Using certain potatoes can help make the soup thick and creamy while others can retain their shape and give your soup some chunks to chew on. Also, a great tip is to finely chop your kale as this will make it tenderize better and give the soup a much finer green coloring that can be pleasing to the eyes.
